... don't waste a bit! At least one lemon per day is used in the Microcosm. Every single scrap is put to use. Today, one lemon was used in a large batch of fresh-brewed iced tea. The skin was used for zest. The pulp was used to rub all over a set of hands, arms, elbows, fingernails, etc. When a lady spends her days in the kitchen, it never hurts to take a few minutes to do a little beauty duty here and there! The remaining skin was run through the garbage disposer in the sink to help clean it out.
Zest was put to good use on this week's bird, which was baked in the convection oven after being rubbed with EVOO, garlic powder, sea salt and pepper. A little water, white wine and lemon juice was added to the pan for periodic basting.
The resulting juice was full of lemon scent and flavor -- the perfect base for a delicious meal. Nothing goes to waste in this kitchen, so lemon is a gift that keeps on giving!
This lemon chicken casserole with cauliflower, mushroom, onion and cheese was delicious. It made use of the two thighs. A little extra stock was added, created by pressure cooking the bones to make a quick additional quantity of liquid. At least two servings of this meal remain to be enjoyed on another day.
Served with a healthy romaine salad, the lemon flavor really stood out. This meal was a couple of steps removed from the initial use of the lemon.
