Eating "Breakfast for Dinner" is a treat. Pancakes, especially -- but it's not rare for the Mr. & Mrs. to hit a diner and have omelets for dinner too.
On the flip side, we often have dinner ingredients left over that make for a fine morning meal. Whenever there's a little bit of steak after dinner, it's often turned into steak and eggs for breakfast. That happens at camp a lot. Quiche is a wonderful dish because it can be enjoyed morning noon and night.
Then there is the burrito. Fast food joints make egg, cheese, bacon versions, etc. All using traditional breakfast ingredients. We take it a step further and just put an egg in any left over burrito filling.
One batch filled a baking dish of six last week, but there was just a smidge remaining. The Mr. (for reference, also know as The Big Guy -- or TBG) boils up a half dozen eggs at a time so he can always bring one to work. The breakfast burrito took advantage of the supply. Nothing fancy -- just putting the refried beans, beef (chopped up left over meatballs), and cheese into a shell and rolling it up. It was baked in foil along with the lunch batch. Once it was cooled, it went into the fridge.
There was also a spare lunch burrito left -- but that was for another day. Anyone knows that having burritos for two meals in a day is never a good idea. But having dinner for breakfast is!

I wish hubby would like breakfast for supper, I often has it when he is away on business. I agree about Quiche, definitely a good choice for any meal.
