Frozen Mac and Cheese

Frozen mac and cheese was left for the boys on a day that we weren't going to be home. Alas, they did not take a break for lunch.  Since it was still going to be served, it got jazzed up the day it was on the menu.  The idea was to use up ingredients from prior lunches in order to dress up lunch from the freezer case.

We had left-over ham and American cheese from grilled ham and cheese sandwiches.  There were also four or five stale taco shells from another lunch. Breaking apart the shells, and cutting up the ham and cheese into small bits was pretty simple.

Once the tray was baked, it spent a few minutes under the broiler to finish crisping up the top layer.  The result was delicious.

This tray was $8.99 and the extra topping just needed to be used it.  It fed four adults with one large portion left for another lunch.  Dessert was Little Debbie marshmallow cakes, and the beverage was iced tea.  The cost for the entire meal was under twelve dollars -- the approximate cost of two fast food value meals.

Cooking at home can be faster and more convenient than picking up something at the drive through.  It was a little more of an effort, but the taste was worth it.
