Monster Carrots

This was one of four HUGE carrots found at a farm stand down the road from our camp.  The bunch was two bucks and purchased more as a novelty than anything else  The original idea was to roast them whole, but then other needs were identified.  These were very dirty and needed quite a scrubbing -- and pup got the skins.


A huge portion was chopped and roasted.  Two servings were taken from that for the first beef meal mentioned in the Bottom Round post.  The rest were set aside for stew.

There was still plenty of carrot left to dice into big chips and put in pickling juice -- which never gets thrown away.  Once the veggies are consumed, new chopped pieces are put back in to take their place.  The result was healthy chips that were crunchy, tart and sweet.  Not your average snack -- unusual and tasty!

One of these days if more monster carrots are found, they may be roasted whole -- but no matter, they were delicious chopped, roasted, pickled and the pup enjoyed the chopped up peels too.
