We love pie in our house. So much so, that when we have guests, we like to offer a choice. Lately, the Micro-Kitchen has gotten lazy and rather than baking two two-crust pies, single shell efforts have been the norm. Having a convection oven means each pie cooks evenly, regardless of location. The oven could actually fit four pies just fine. This means there's always room for a pumpkin pie -- the easiest pie of all to bake.
Rather than a two crust apple pie, we're enjoying single crust Dutch Apple. The crumble is made with graham crackers, nuts, sugar, vanilla and butter. The two pies cook for the same amount of time on the same temperature.
Crusts are made with whole wheat pastry flour and a minimal amount of additional sweeteners. They'd be a somewhat virtuous dessert, if not for the fact we like vanilla ice cream and whipped cream on them. When it comes to pie, there should be no holding back!
