What an unexpected surprise -- strawberries for $1.49 a quart at Aldi. This time of year, we are resigned to eating frozen fruit. To find economical berries during the winter is a treat. Of course they aren't quite as flavorful as summer berries, so adding a couple of teaspoons of sugar helps.
The hulls were set aside for the pup, along with a bit of coconut oil and parsley, then whizzed into a pulp. Parsley is a spice we are adding to a lot of her food because of its antioxidant and inflammation fighting properties. It is a commonly recognized cancer fighting herb and neither toxic nor expensive. This little bit of herb/fruity cast-offs proved to be a delightful snack -- consumed in less than 10 seconds.
Blueberries were $1.99 per pint at Save-a-Lot. The Big Guy loves blueberries in yogurt. The Haus Frau loves them because they require so little prep -- just wash. No need to slice and dice. Blueberries and corn muffins are a Microcosm favorite, so a double batch of batter was combined with some berries.
This was a cheaters batch -- two boxes of Jiffy mix. Only about 1/3 of the pint was used in the batter. Lots of yum for about two bucks.
Prior to the great berry purchase, a jar of strawberry/blueberry sauce was thawed from the freezer. It was delicious atop the blueberry "bread," slathered over a generous dab of yogurt and sprinkled with sliced almonds.
